Our Sauvignon Blanc grapes are grown in the Napa Valley and the North Coast, including in our own estate ranches in Carneros, Napa, Rutherford, and Calistoga. The cooler, southern part of the valley gives us sauvignon blanc with bright citrus characters, flinty minerality, and balanced acidity, while the warmer northern region brings out tropical notes in the final wine.

Fermentation

Hand-picked clusters are harvested at night to keep fruit cool and preserve fresh flavors, aromas, and acidity. Cluster pressing for highest quality juice with minimal extraction of phenolic compounds that can add astringency and bitterness. Our Sauvignon Blanc is fermented in stainless steel tanks and concrete fermentation vessels to ensure full development of varietal character and to preserve aromatic purity.

4 months in stainless steel tanks (97%) and concrete eggs (3%)
