Ingredients
Sauce
- 8 oz chicken or duck bones (cut up)
- 4 rounds sliced ginger (1/4-inch thick)
- 6 scallions (cut into 2-inch segments)
- 1½ cups sake
- 1½ cups mirin
- 3 tbsp turbinado sugar
- ¾ cup soy sauce
Shiitake and Chicken Skewers
- 4 large chicken thighs, boneless and skinless
- 6 large shiitake mushrooms (stems removed)
- vegetable oil
- salt
- 6-inch bamboo skewers (soaked in water)
Scallion Salad
- 1 tbsp soy sauce
- ½ tsp rice wine vinegar
- ½ tsp white sugar
- ¼ tsp sesame oil
- pinch of togarashi
- 1 cup scallions (julienned into 2-inch lengths)
- pinch of sesame seeds (toasted)
Directions
Sauce
Step 1
To make the sauce or tare, preheat the oven to 400°F. Place the chicken or duck bones on a foil-wrapped sheet pan. Roast in the oven until evenly brown, about 30 minutes. Add the ginger and green onion during the last few minutes in the oven. Set aside.
Step 2
Place the sake and mirin in a medium saucepan and simmer for five minutes to burn off the alcohol. Add the sugar, soy sauce and chicken bones. Simmer slowly until reduced by half until glaze is beginning to get syrupy. Strain and reserve.
Shiitake and Chicken Skewers
Step 1
For the skewers, dice chicken into small bite-size pieces, about one inch. Slice the shiitake mushroom caps into quarters. Thread each skewer with 3-4 pieces of each item, alternating ingredients, starting with the mushroom and ending with the chicken. Reserve in refrigerator.
Scallion Salad
Step 1
To make the scallion salad, whisk together the soy sauce, rice wine vinegar, sugar, sesame oil and togarashi. Toss the scallions with the dressing and the sesame seeds when ready to serve.
Assemble Skewers
Step 1
Brush each skewer with oil, season with salt and grill over a hot grill for one to two minutes per side. Brush with the sauce during the last minute of cooking and brush again when you remove them from the grill. Garnish the skewers with the scallion salad and serve immediately. Note- place folded strips of foil on the grill under the ends of the skewers to keep them from burning.
