- 1¼ cups vegetable oil
- ¾ cup brown sugar
- ½ cup white sugar
- 1 large egg
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp kosher salt
- ¼ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 3 cups quick cooking oats
Peach Ice Cream
- 3 cups fresh peaches (peeled, pitted, and chopped)
- 1 cup white sugar (divided)
- 2 tbsp lemon juice
- ¾ cup whole milk
- 2¼ cups heavy cream
- 1 tsp vanilla extract

Step 1
To make the oatmeal cookies, preheat the oven to 350°F. Combine the oil, sugars, egg and vanilla in the work bowl of a stand mixer and whisk to combine. Mix together the flour, baking soda, salt and spices. Add to the wet ingredients and mix to combine with the paddle attachment. Stir in the oats and mix to combine.
Step 2
Scoop with a small ice cream scoop onto a silpat or parchment lined sheet pan. Flatten with the palm of your hand. Bake for 8-10 minutes. Cool on a resting rack and reserve. Makes approximately 24 cookies.
Peach Ice Cream
Step 1
To make the ice cream, mix the peaches with 1/3 cup of the sugar and the lemon juice in a medium size mixing bowl. Allow to sit for five minutes, transfer to the work bowl of a food processor and then pulse until finely chopped but not pureed.
Step 2
Whisk together thr remaining sugar with the milk until the sugar is dissolved. Add the cream, vanilla extract and the peach mixture. Stir until combined. Freeze according to ice cream maker’s directions.
Assemble Ice Cream Sandwiches
Step 1
To make the ice cream sandwiches, place a medium size scoop of ice cream on a cookie and sandwich with another. Press together to seal. Set on a sheet pan and place in the freezer until firm.
