Our 2021 Vaca Cabernet awakens the senses with complex aromas of boysenberry, red plum, blackberry, tobacco, cloves, and toasty oak. A full-bodied wine, the Vaca delivers concentrated fruit flavors with well-knit tannins. The opulent berry notes give way to a lush finish with notes of cherry preserves, baking spices, and dried herbs. This wine will continue to age gracefully in the bottle for another decade.

This wine is made with grapes from three of our estate vineyards located along the Vaca mountain range on the east side of Napa Valley. Suscol Springs is the coolest site, its vines planted amid rocky outcrops overlooking the town of Napa. Doggwood, located further north, is a warm bowl like valley with multiple exposures. Dancing Bear, the northernmost site, sits on Howell Mountain at the highest elevations, enjoying 360- degree exposure. This diverse range of growing conditions allow us to produce a bold, complex, and robust cabernet with beautiful varietal expression and a well-balanced structure of acidity and tannin.
The 2021 season, though officially a drought year, began with ample rainfall to fill the soils. A mild spring, characterized by below average temperatures and plentiful sunshine, allowed the grapes to ripen slowly and evenly. The result was a small crop of exceptionally concentrated grapes, leading to a well-structured and full-flavored wine that showcases our estate vineyards and will improve with cellaring.
