Chocolate Salami

Chocolate Salami - enjoy with coffee for dessert or our Cabernet Sauvignon Napa Valley.


½ c. red wine
½ c. dried cranberries
14 oz. bittersweet chocolate
1½ c. heavy cream
1 c. slivered almonds, toasted and coarsely chopped
½ c. pistachios, toasted and coarsely chopped
1 c. Nilla Wafers cookies, coarsely chopped
2 tsp. Grand Marnier
½ tsp. orange zest
2 c. powdered sugar


Place the red wine in a small saucepan and bring to a boil. Pour over the cranberries and allow them to soften and cool. Meanwhile, chop the chocolate and place in a stainless steel bowl. Bring the cream to a boil in a small saucepan and pour over the chocolate. Stir with a rubber spatula to melt and evenly distribute the chocolate. Allow to cool to room temperature. Once chocolate is cool and starting to thicken, stir in the nuts, cookies, grand Marnier and orange zest. Drain the wine from cranberries and add the cranberries to the chocolate mixture. Stir to evenly distribute. Spoon mixture onto the bottom edge of a piece of parchment paper and roll up into a tight log. Transfer to the refrigerator and chill until firm. Place the powdered sugar in a shallow dish and roll in the powdered sugar. Cut into slices and serve.
